Piment d'Espelette is a chile pepper from the Espelette region of France and has a pleasingly sharp taste with a hint of fruit and mild heat. It is an AOC (appellation controlee) product, is is difficult to find. It is a staple spice of Basque cuisine. It is a key ingredient in Piperade, and adds wonderful flavor to everything from paella to mayonnaise to even popcorn. Its heat is around 4,000 scoville heat units.
