Mahlab is made from the ground pits of Mahaleb or St. Lucie cherries grown in the Mediterranean region. It has a cherry and almond like aroma with an almond like, nutty flavor ending with a bitter after taste that softens after cooking. It is often used in pastries, cookies, breads, confectionery, rice pudding, cheese desserts and honey desserts from Egypt to Greece to Turkey.
