Saffron is a deep red, richly aromatic spice with a warm, earthy taste. It is made from the dried stigmas of the crocus rose and it takes approximately 80,000 roses to produce 5 lbs. of stigmas to create 1 lb. of saffron after toasting. It is the most expensive spice in the world. It is used for color, aroma and flavor in dishes from paella to bouillabaisse to risottos.
