Traditionally this might be made over an outdoor flame with plentiful lemongrass stalks as aromatic skewers, but wide bamboo skewers are inexpensive and your oven's broiler setting works just fine. Coconut cream can be made from canned coconut milk by placing the can in the refrigerator for an hour - the rich coconut cream will solidify and the thin coconut water will separate. In place of pork, this dish can also be made with a mix of 1/2 pound ground firm white fish and 1/2 pound of ground cleaned and de-veined shrimp. Ingredients: 1 pound Ground Pork 2 Tbs Coconut Cream 1-2 tsp Fish Sauce to taste 1 Tbs Balinese Blend 2 tsp Palm Sugar or 1 tsp plain white sugar 2 Tbs Ground Coconut - dessicated is okay, not sweetened Vegetable or Coconut Oil for brushing Bamboo Skewers should be soaked 15 minutes before using to help keep them from burning - they can be found at asian markets and specialty food stores. Mix all ingredients in a bowl until smooth and becoming sticky. To test the seasoning, fry a teaspoon of the mixture in a pan and taste, add more salt or fish sauce if necessary. Wrap 3-4 Tablespoons of the meat mixture around the end of each skewer, then brush the meat with oil. Grill over a medium high heat or cook on a foiled pan under the broiler, watching carefully and turning every couple minutes to brown evenly and cook through. Serve with Jasmine rice, peanut sauce and lime wedges. Learn More

Doro Wot Ingredients: 4 large Onions, finely minced 1/2 Cup Vegetable Oil 1 Tablespoon Garlic, minced 1 Tablespoon Ginger, minced 1/4 Cup Spice Ace Berbere 6 skinless Chicken legs 1 Lemon Salt to taste 4 Hard boiled Eggs, peeled First, sprinkle the chicken legs with salt and the juice of the lemon. Cover and set in the fridge to marinade while the onions cook. To mince the onions quickly, peel and cut them into large chunks and pulse in a food processor until very fine. Set a pot on medium-high heat and add the onions with no oil. At this point you can add a little salt to draw water from the onions. Cook with the lid on, stirring every 5 or 10 minutes for about 40 minutes, until the onions are soft and translucent and starting to turn golden. Add the vegetable oil and cook, stirring, for 20 minutes until the onions begin to brown. Add in the garlic and ginger and cook for 10 minutes until the raw fragrance goes away. Add the Berbere and cook another 20 minutes, being careful not to let the mixture stick to the bottom of the pan. Now put in the chicken pieces and lower the heat to medium-low. Allow to cook with the lid on, stirring every 10-15 minutes, for 45 minutes until the chicken is about tender. Taste and adjust the salt. Cook without the lid for another 10-20 minutes until the sauce reduces a little, then add the hardboiled eggs and allow them to warm through. Enjoy with Injera. Learn More

Chickpea and Butternut Squash Tagine with Apricots and Almonds: 1 Tablespoon oil or butter 1 medium Onion, finely minced 2 cloves Garlic, about 1 teaspoon minced 1 Tablespoon Casablanca Tagine Blend 1 (19-oz) Can cooked Chickpeas, drained 2 cups butternut squash, cut into 2 inch chunks 1 cup of water, or more as needed Salt to taste, about 1 1/2 teaspoons Kosher salt 6-8 whole dried Apricots, pitted 2 Tablespoons roasted Almonds, for garnish 1 teaspoon Parsley, minced for garnish Put a pan with a fitting lid on medium heat. Saute the onions in the oil with some salt until soft and turning brown, about 15 minutes. Add the garlic and stir for 5 minutes until cooked, then add the Casablanca Tagine Blend and stir for 30 seconds to fry the spices. Pour in 1 cup of water and let mixture simmer for 5 minutes, then add in the drained chickpeas and cover to cook on medium for another 10 minutes. Stir in dried Apricots and Butternut Squash and adjust the water level if necessary, the liquid should come up about half-way around the vegetables. Lid the tagine and cook over a low flame until the squash is tender and the apricots have plumped, about 30 minutes. Adjust the salt and garnish with roasted almonds and parsley sprinkled over top. Cover the dough and set aside for 30 minutes, then knead it lightly for a few minutes and seperate out balls of dough about 2inches in size. Make a cone from the half-circles of dough by folding the semi-circles in half up to the points and pinching the straight sides firmly together. You can wet the edges you are sealing for a tighter seal. After filling the cone, the rounded side can be folded over the top and sealed by wetting both sides of the dough, or you can make a paste from flour and a little water to use as a glue to hold the samosa wrapper tightly sealed. Heat the 3 Tablespoons of oil in a skillet over medium high setting and toss in cumin seeds - they should sizzle a little. Stir in garlic, ginger, and green chile until cooked through, then add the onion and saute until translucent. Add Vadouvan Ace, chile powder, and the cooked potato. Mash with the back of your spoon so the potato chunks are no larger than about 1/2 inch pieces. Stir in frozen peas, chaat masala, and cilantro. Taste the mixture and add more salt or a squeeze of lime juice if desired. Fill into homemade samosa pockets or simply use store-bought dumpling/wonton wrappers for a crispy cocktail party snack.
