Our Jamaican curry powder is wonderful to use when you want to make a chicken, pork, vegetable or goat curry. It will bring you back to the island of Jamaica with each bite. Add cayenne pepper or scotch bonnet pepper if you'd like more heat. Try our recipe below for a delicious Jamaican Chicken Curry.

Jamaican Chicken Curry
2lbs Chicken Legs, thigh and drumstick separated
4 Scallions or Green Onions, chopped
3 cloves Garlic, minced
1 inch piece of Ginger, grated
2 sprigs fresh Thyme or 1/2 teaspoon dry Thyme
1 teaspoon whole Allspice
1/2 Onion, chopped
2 Tablespoons Oil, such as coconut
2 Tbsp Jamaican Curry Powder
Salt to taste, such as Golden Gate Seasoning Salt
3/4 cup hot Water, or as needed
2 teaspoons Cornstarch(optional)

Marinate the chicken legs with the scallions, garlic, ginger, thyme, allspice and some salt to taste for a couple hours or overnight in the refrigerator. Heat the oil in a pan over medium high heat and brown chicken legs in batches until colored on all sides, then set aside. Turn the heat to medium and add in the onion and the curry powder and cook about 3 minutes until the curry is fragrant, stirring to prevent any burning. Add the chicken back in and simmer with the curry, stirring to coat the chicken pieces. Add water to scrape the bottom of the pan and achieve the desired sauce texture, simmering 15-20 minutes. If desired, add in some cornstarch mixed with a teaspoon of water and simmer for a couple minutes to thicken your curry sauce. Taste to adjust salt, or add more water as necessary, and serve with rice or roti.
