This delicious salt free and sugar free mole blend is great with turkey, chicken and pork. Good as a rub or made into a complex sauce. For fun and extra deliciousness, add dark chocolate and / or see below for a simple recipe.

Quick Mole Coloradito:
1/4 Cup Mole Coloradito Blend
3 Plum or Roma Tomatoes
1 Tablespoon Vegetable Oil or Lard
1 + 1/2 Cups Chicken Stock
1 + 1/2 teaspoon Nut Butter, such as Peanut, Almond, or Sesame(Tahini)
1/2 teaspoon Sugar, OR 7 Raisins for sweetness

In a hot skillet or comal, char the tomatoes on 3 or 4 sides, turning as black spots form. Peel the tomatoes and drop them into a blender along with the chicken stock, Mole Coloradito Blend, and nut butter. If using raisins for sweetness, these should be added to the blender. Puree until smooth. Bring the oil to medium heat in a skillet and pour the raw mole into the skillet to cook. The sauce should foam up a little and subside. Simmer the sauce for about 25 minutes until the flavors develop and it thickens. Salt to taste and add sugar if desired. If necessary, add some water to adjust the thickness. To enjoy, simply serve with poached chicken and warm tortillas.
