Chicken Shawarma:
Shawarma is a versatile dish that can be made with most any meat, served in a pocket or wrap, or simply piled on a plate garnished with salad, bread or fresh cut vegetables. This flavorful marinated Chicken Shawarma can be cooked over the grill or under your oven broiler, and makes great leftovers when heated up in a skillet the next day.

2 lb Chicken Thigh or Breast, bone and skin removed
1 Tablespoon Shawarma Blend
3 Tablespoons Olive Oil
1 teaspoon kosher Salt
Juice of 1/2 a Lemon
An oven-safe pan with a rack - or skewers for the grill

Serving Suggestion:
Pita or Lavash Bread
1 cup Lettuce, shredded
1 Cucumber, cut in 1/2 inch slices
1 Tomato, cut in 1/2 inch slices
1/2 Onion, cut in 1/2 inch slices
1 cup Parsley or Cilantro, chopped
Lemon wedges or hot sauce

In a small bowl, combine olive oil with Shawarma Blend, salt, and lemon juice. Cube your chicken into roughly 1 inch chunks and mix with the spice paste in a sturdy zipper top bag, then allow to marinate in the refrigerator for at least an hour, preferably overnight.

If using an oven, make sure there are a few inches between the top rack and your broiler and place chicken chunks spaced out on a metal rack in an oven-safe pan - the rack will keep the chicken from steaming in its own juices as it browns. Turn on the broiler and watch carefully after the chicken goes in, checking back every couple minutes and flipping each piece over once to get nice charred tips as they cook through, maybe 7-15 minutes depending on your broiler. If your broiler is very strong, just give them a little color and then turn the heat to 350 to let them gently cook another 5-10 minutes.

To prepare shawarma on the grill, skewer the chicken pieces and cook them over a medium flame, turning them as they color and get little charred edges. If they brown quickly, move them to a cool spot on the grill to finish cooking more gently, it should take about 10-20 minutes.

To serve, slice cooked chicken shawarma thinly and wrap up with crisp veggies and herbs in warmed Lavash or Pita bread - or simply plate with vegetables, rice or your favorite fresh salad, garnished with lemon wedges and your favorite hot sauce.
