Singapore Style Noodles
1 package Rice Vermicelli (4.5-5.5oz)
1/4lb peeled, de-veined raw shrimp
1/2 Bell Pepper of your choice, julienned
1/2 Carrot, julienned
1/4 of an Onion, sliced
3 Green Onions, sliced
1 Handful of Snow Peas or Spinach
1 or 2 Eggs, beaten to scramble
1 teaspoon Soy Sauce
2 teaspoons Fish Sauce
2 Tablespoons Vegetable Oil or Lard
3 teaspoons Singapore Curry Powder
Optional: 3 Hot chiles such as Thai Birdseye for stir-frying
Salt to taste

Put your rice noodles in a bowl of hot water to soften them for about 5-10 minutes, then rinse them under cool water and set them aside. In a hot wok or skillet, add a teaspoon of oil and fry your egg until scrambled, then set aside. Add two more teaspoons of oil to your hot pan, toss in any optional chiles, and stir-fry your shrimp for about a minute. While shrimp is still cooking, add each of your vegetables - onion and carrot, then bell pepper, peas/spinach and green onions last - and cook on high heat, tossing constantly to cook them evenly in a couple minutes. Add in 1 teaspoon fish sauce and 1 teaspoon of Singapore Curry powder to season the shrimp and vegetables, then set aside with the egg. Add the remaining tablespoon of oil to the pan and stir-fry the drained, softened rice noodles for thirty seconds to a minute, then add the remaining curry powder and toss to evenly coat the noodles. Add in the reserved shrimp, vegetable and egg, and the remaining teaspoon of fish sauce and soy sauce and toss the noodles to combine. Taste to adjust with salt if necessary, and enjoy.
