Vadouvan is a delicious, savory aromatic blend that is the French interpretation of curry. It is heavenly and can be used in place of traditional curry powder. It is wonderful on everything from lamb to squash to deviled eggs to even popcorn. A customer of ours recommends the recipe below for a roast chicken with Vadouvan curry powder.
Vadouvan Roast Chicken
1 Whole chicken, cleaned and innards removed - about 4.5lbs
1 Tablespoon Oil such as Olive Oil
1 heaping Tablespoon of Spice Ace Vadouvan
5 medium sized whole Carrots, peeled
3/4 cup White Wine or Chicken Stock to baste

Set your oven to 375 degrees Fahrenheit. While your oven preheats, pat your chicken dry with paper towels and season with salt and pepper to taste. Coat your chicken with the oil, then sprinkle it all over with the Vadouvan. In a baking dish large enough for your chicken, add your carrots and rest the chicken on top. Add the White Wine or Chicken Stock to your pan, then place your chicken into the preheated oven and baste every 20 minutes or so until cooked through. The chicken should take about one and one half to two hours to cook through. Serve with the braised carrots and the reduced roasting juices from the pan.
