This aromatic spice blend is popular in the Middle East and Northern Africa. Sumac gives Za'atar a tart taste, the oregano and thyme add warmth and depth and the sesame seeds give a lovely earthiness. Rub on meats and vegetables, include in marinades and salad dressing, mix with olive oil and apply to breads before baking. Za'atar is a versatile spice blend that works on almost anything. In this recipe, we like to choose olives such as Castelvetrano or Mission for a buttery flavor, and Kalamata or Manzanilla for stronger, more tart flavor.

Za'atar Marinated Olives
Ingredients:
1 cup of cured Olives, drained.
2 Tablespoons Extra Virgin Olive Oil
1 Tablespoon of Za'atar

Mix all ingredients together in a bowl, and enjoy. Best when marinated overnight and brought to room temperature before serving. Excess oil can be used on salad or enjoyed with bread.
