Doro Wot Ingredients: 4 large Onions, finely minced 1/2 Cup Vegetable Oil 1 Tablespoon Garlic, minced 1 Tablespoon Ginger, minced 1/4 Cup Spice Ace Berbere 6 skinless Chicken legs 1 Lemon Salt to taste 4 Hard boiled Eggs, peeled First, sprinkle the chicken legs with salt and the juice of the lemon. Cover and set in the fridge to marinade while the onions cook. To mince the onions quickly, peel and cut them into large chunks and pulse in a food processor until very fine. Set a pot on medium-high heat and add the onions with no oil. At this point you can add a little salt to draw water from the onions. Cook with the lid on, stirring every 5 or 10 minutes for about 40 minutes, until the onions are soft and translucent and starting to turn golden. Add the vegetable oil and cook, stirring, for 20 minutes until the onions begin to brown. Add in the garlic and ginger and cook for 10 minutes until the raw fragrance goes away. Add the Berbere and cook another 20 minutes, being careful not to let the mixture stick to the bottom of the pan. Now put in the chicken pieces and lower the heat to medium-low. Allow to cook with the lid on, stirring every 10-15 minutes, for 45 minutes until the chicken is about tender. Taste and adjust the salt. Cook without the lid for another 10-20 minutes until the sauce reduces a little, then add the hardboiled eggs and allow them to warm through. Enjoy with Injera. Learn More

Seafood Gratin with Smoked Trout: 1 Tablespoon Butter 1 Smoked Trout Filet 1 Red Potato, boiled and chopped 1 Roma Tomato, chopped ½ cup Sweet Peas, frozen is fine 1 Stalk of Celery ½ Onion For the Mornay Sauce: 3 Tablespoons Butter 3 Tablespoons Flour 1 ½ cups Milk 4 ounces Gruyere Cheese Salt to taste 2 teaspoons Sea Cliff Blend Broiler-safe baking dish Cut the onion and celery into ½ inch dice. If needed, remove the skin and de-bone the smoked trout filet and break into ½ inch pieces. Saute the onion and celery in the butter until translucent. Gently stir in the peas, potato, tomato, and the smoked trout and add the mixture to your baking dish. To make the cheese sauce, melt the butter in a sauce pan and whisk in the flour until the color changes to a very light brown. Heat the milk for a couple minutes in the microwave and whisk into the flour until the mixture begins to thicken. Add the cheese and Sea Cliff Blend and whisk until desired consistency.
