Chickpea and Butternut Squash Tagine with Apricots and Almonds: 1 Tablespoon oil or butter 1 medium Onion, finely minced 2 cloves Garlic, about 1 teaspoon minced 1 Tablespoon Casablanca Tagine Blend 1 (19-oz) Can cooked Chickpeas, drained 2 cups butternut squash, cut into 2 inch chunks 1 cup of water, or more as needed Salt to taste, about 1 1/2 teaspoons Kosher salt 6-8 whole dried Apricots, pitted 2 Tablespoons roasted Almonds, for garnish 1 teaspoon Parsley, minced for garnish Put a pan with a fitting lid on medium heat. Saute the onions in the oil with some salt until soft and turning brown, about 15 minutes. Add the garlic and stir for 5 minutes until cooked, then add the Casablanca Tagine Blend and stir for 30 seconds to fry the spices. Pour in 1 cup of water and let mixture simmer for 5 minutes, then add in the drained chickpeas and cover to cook on medium for another 10 minutes. Stir in dried Apricots and Butternut Squash and adjust the water level if necessary, the liquid should come up about half-way around the vegetables. Lid the tagine and cook over a low flame until the squash is tender and the apricots have plumped, about 30 minutes. Adjust the salt and garnish with roasted almonds and parsley sprinkled over top.
