Vadouvan Veggie Samosa For the filling: 1 pound peeled russet potato, boiled 1/2 red onion, chopped 1 clove of garlic, minced 1 inch chunk of ginger, grated 1 Serrano Chile, Minced 1/2 Cup frozen Green Peas 1 Handful Cilantro, Chopped 3 Tablespoons Oil 1 teaspoon Cumin Seed 1 teaspoon Chile Powder (such as Kashmiri) (optional) 1 teaspoon Chaat Masala 1 Tablespoon Vadouvan Ace Salt to taste For the dough: 2 1/4 Cups Flour 1/2 teaspoon Baking Powder 1 teaspoon sugar 1 1/2 teaspoons Ajowan Seed 1 teaspoon Salt 5 Tablespoons Ghee 1/2 Cup Cold Water, or as needed +Plus Oil for frying (optional) Fresh green chile such as Serrano, slit down the side and fried for garnish 1/2 a lime for seasoning or serving garnish To make home made samosa dough mix flour, baking powder, sugar, and salt. Thoroughly work in ghee with your fingertips until the flour is evenly saturated, then add the ajowan seeds. Add in water a little bit at a time and mix until a rough dough forms - you may need slightly more or less water. Cover the dough and set aside for 30 minutes, then knead it lightly for a few minutes and seperate out balls of dough about 2inches in size. Cover and allow these to rest another 10 minutes before rolling them out and cutting them in half. Make a cone from the half-circles of dough by folding the semi-circles in half up to the points and pinching the straight sides firmly together. You can wet the edges you are sealing for a tighter seal. After filling the cone, the rounded side can be folded over the top and sealed by wetting both sides of the dough, or you can make a paste from flour and a little water to use as a glue to hold the samosa wrapper tightly sealed. Heat the 3 Tablespoons of oil in a skillet over medium high setting and toss in cumin seeds - they should sizzle a little. Stir in garlic, ginger, and green chile until cooked through, then add the onion and saute until translucent. Add Vadouvan Ace, chile powder, and the cooked potato. Mash with the back of your spoon so the potato chunks are no larger than about 1/2 inch pieces. Stir in frozen peas, chaat masala, and cilantro. Taste the mixture and add more salt or a squeeze of lime juice if desired. Fill into homemade samosa pockets or simply use store-bought dumpling/wonton wrappers for a crispy cocktail party snack. Fry at 350 degrees fahrenheit for about 4-5 minutes, or until golden brown. Serve with a fried green chile and a wedge of lime. Makes 10-12 standard samosas or 20-30 cocktail samosas. Learn More

Doro Wot Ingredients: 4 large Onions, finely minced 1/2 Cup Vegetable Oil 1 Tablespoon Garlic, minced 1 Tablespoon Ginger, minced 1/4 Cup Spice Ace Berbere 6 skinless Chicken legs 1 Lemon Salt to taste 4 Hard boiled Eggs, peeled First, sprinkle the chicken legs with salt and the juice of the lemon. Cover and set in the fridge to marinade while the onions cook. To mince the onions quickly, peel and cut them into large chunks and pulse in a food processor until very fine. Set a pot on medium-high heat and add the onions with no oil. At this point you can add a little salt to draw water from the onions. Cook with the lid on, stirring every 5 or 10 minutes for about 40 minutes, until the onions are soft and translucent and starting to turn golden. Add the vegetable oil and cook, stirring, for 20 minutes until the onions begin to brown. Add in the garlic and ginger and cook for 10 minutes until the raw fragrance goes away. Add the Berbere and cook another 20 minutes, being careful not to let the mixture stick to the bottom of the pan. Now put in the chicken pieces and lower the heat to medium-low. Allow to cook with the lid on, stirring every 10-15 minutes, for 45 minutes until the chicken is about tender. Taste and adjust the salt. Cook without the lid for another 10-20 minutes until the sauce reduces a little, then add the hardboiled eggs and allow them to warm through. Enjoy with Injera. Learn More

Sambar is traditionally eaten with starch sides like Rice, Idlis, and Vadas - but can also be enjoyed as a starter course or side dish to a larger meal. Ingredients: 1/4 Cup skin-less lentils such as Chana Dal, Masoor, etc 2 Cups Water + 1/2 cup extra to thin the Sambar 1 Tablespoon Sambar Powder 1 Tablespoon Coconut Oil (or your favorite vegetable oil) 1/4 teaspoon Turmeric Powder 1/2 teaspoon Black Mustard Seeds (any type will do) 1 teaspoon Tamarind Powder or Tamarind Paste 1/2 Medium Onion, cut in 1 inch pieces 1/2 Cup of okra, cut in 2 inch lengths 1 Chayote squash or about 1 Cup cut into 1 inch chunks 1 roma Tomato, cut in 1 inch chunks Salt to taste 1/4 cup roughly chopped Cilantro for garnish Boil 1/4 cup skinless Lentils in a pot of 2 cups water over medium high heat until falling apart, about 30-45 minutes. (You can also mash the lentils with a potato masher or cook them with a tiny pinch of baking soda to help the lentils fall apart faster.) Set cooked lentils aside. In a separate pan big enough for all of your Sambar, heat oil over medium high heat and add in the Mustard Seeds. When the mustard seeds start to sputter, add in Turmeric, chopped Onion, and chopped Tomato, and saute until they begin to soften. Stir in Sambar Powder and cook the spices for 5 minutes to help the flavors develop. Add the cooked lentils with their cooking liquid, the remaining cut Okra and Chayote, and the Tamarind. Allow to cook over medium high heat 15-20 minutes until the vegetables soften, then salt to taste and garnish with Cilantro. If necessary, thin with a little extra water. Learn More

To finish, stir in yogurt and heavy cream and salt to taste. For an extra silky texture, blitz your Tikka Masala in a blender for a few minutes before serving. Cook in a roasting pan for one hour or until the internal temperature reaches about 165 degrees, then remove from oven and allow to rest at least 20 minutes before carving.
