Seafood Gratin with Smoked Trout: 1 Tablespoon Butter 1 Smoked Trout Filet 1 Red Potato, boiled and chopped 1 Roma Tomato, chopped ½ cup Sweet Peas, frozen is fine 1 Stalk of Celery ½ Onion For the Mornay Sauce: 3 Tablespoons Butter 3 Tablespoons Flour 1 ½ cups Milk 4 ounces Gruyere Cheese Salt to taste 2 teaspoons Sea Cliff Blend Broiler-safe baking dish Cut the onion and celery into ½ inch dice. If needed, remove the skin and de-bone the smoked trout filet and break into ½ inch pieces. Saute the onion and celery in the butter until translucent. Gently stir in the peas, potato, tomato, and the smoked trout and add the mixture to your baking dish. To make the cheese sauce, melt the butter in a sauce pan and whisk in the flour until the color changes to a very light brown. Heat the milk for a couple minutes in the microwave and whisk into the flour until the mixture begins to thicken. Add the cheese and Sea Cliff Blend and whisk until desired consistency. Chickpea and Butternut Squash Tagine with Apricots and Almonds: 1 Tablespoon oil or butter 1 medium Onion, finely minced 2 cloves Garlic, about 1 teaspoon minced 1 Tablespoon Casablanca Tagine Blend 1 (19-oz) Can cooked Chickpeas, drained 2 cups butternut squash, cut into 2 inch chunks 1 cup of water, or more as needed Salt to taste, about 1 1/2 teaspoons Kosher salt 6-8 whole dried Apricots, pitted 2 Tablespoons roasted Almonds, for garnish 1 teaspoon Parsley, minced for garnish Put a pan with a fitting lid on medium heat. Saute the onions in the oil with some salt until soft and turning brown, about 15 minutes. Add the garlic and stir for 5 minutes until cooked, then add the Casablanca Tagine Blend and stir for 30 seconds to fry the spices. Pour in 1 cup of water and let mixture simmer for 5 minutes, then add in the drained chickpeas and cover to cook on medium for another 10 minutes. Stir in dried Apricots and Butternut Squash and adjust the water level if necessary, the liquid should come up about half-way around the vegetables. Lid the tagine and cook over a low flame until the squash is tender and the apricots have plumped, about 30 minutes. Adjust the salt and garnish with roasted almonds and parsley sprinkled over top.
