The Chiltepin Chile or Tepin Chile is known as the official native pepper of Texas. It is a small, round chile pepper that packs a heat of 50,000-100,000 scoville heat units. This is the oldest of the capsicum annuum species and is thus often referred to the "mother of all chile peppers". To re-hydrate, soak in hot water or cook as part of a dish for at least 10 minutes.
